Menu Plan Monday 2-2-09

It has been quite a while since I posted any homemaking posts, but I am hoping to get back into the swing of things.  I have found that not having a plan has caused me to be unprepared and to spend more money than I would like.  We are tightening our belt around here, not because of financial necessity, but out of a desire to be prepared.  We are very blessed that Gene’s job is going well, and this current economic situation may not even affect our income, but we want to be prepared just in case it does. One of the ways I am trying to save money is by cutting back food expenditures.  I have tried couponing, but find I buy much of what I don’t need, and way too much junk.  I believe that I can cook just as frugally by doing more scratch cooking, and using less processed foods.

This menu has many low cost meals and I hope to be posting pictures and recipes as the week progresses.  Tomorrow I will be buying a 10lb bag of leg quarters which I will boil, and de-bone; freezing the meat in 2 cup packages.  I have found that 2 cups of chicken is plenty in most recipes for my family’s taste. I will then make a stock using the liquid from the boiled chicken, the bones and some vegetables. On Thursday I plan on cooking a couple of roasts by adapting this recipe. I normally wouldn’t buy roast on a tight budget, but I bought these a couple of months back for about what I pay a pound for ground turkey. I will make several meals out of them, which will help stretch my dollar. For other great menu ideas, be sure and drop by Laura’s blog.

Monday: Lentil Chili with Cornbread

Tuesday: Chicken & Dumplings with Biscuits

Wednesday: Chicken Dressing Casserole, Sweet Potatoes, & Corn

Thursday: Smoked Roast, Mashed Potatoes, Cooked Carrots,  Gravy

Friday: Open-Faced Roast Sandwiches with Homemade Fries

Saturday: Salsbury Steak with Mashed Potatoes, Gravy and another vegetable

Menu Plan Monday 11-3-08

This is the first post on this new blog; until I transfer the archives over you can find them at the old address.  We have been moving things around a lot with our blogs, trying to set them up more efficiently.  When you have 5 bloggers in one family, things can tend to get a little crazy, so we have made our Keeth family site our clearing house for all of our blogs. It will work much like a RSS page for our family. We will put a small snippet from our posts on that blog, so that readers can easily see who has posted. Each post will have a link in it that will take you to our individual blogs.

I have been using coupons lately, trying to stretch my food dollar and along the way I have been learning to get some good bargains. The girls and I view finding good deals like being on a treasure hunt. I may make some posts detailing some of the deals I’ve made in the near future.
